About Us

Welcome to King David Olive Oil, where tradition meets health. Situated in the hills surrounding an old Spanish farming village, our olive orchards have been cultivated for generations. Our trees range from 300-1000 years old.  They survive for hundreds of years due to ancient farming methods that we still use today.

As a result, our strong olive trees produce olive oil rich in antioxidants, polyphenols, and essential nutrients. In addition, we use an ancient Roman extraction method called the slow drip method, a painstakingly slow 30 day process which produces oil unlike any other.

At King David Olive Oil, our Premium Olive Oil is produced from Ancient Heirloom trees 300-1000 years old. Situated in the hills surrounding an old Spanish farming village, our olive orchards have been cultivated for generations on a Family Farm. 

King David Olive Oil is defined by our strict use of (organic) ancient heirloom trees. However, one of our oil's other unique features is its extraction process. The extraction we use is an ancient Roman technique called "Slow Drip." This 30 Day method allows the oil to separate from the water and "residue" naturally, albeit slow, while keeping the molecular & nutritional structure intact. 99% of olive oil today utilizes the modern-day centrifuge to separate the oil. This destroys the oil's molecular structure, thereby destroying many of its health benefits. Therefore, sticking with the ancient slow-drip method ensures optimal taste & nutritional benefits. King David Olive Oil is so unique you will taste & feel the difference. These olives are not exposed to pesticides or fertilizers & are Non-GMO.

Cold Drip Method

The olives are pressed between ancient stones. Then the oil is extracted using the ancient slow drip method, instead of the commonly used centrifuge. Centrifuge extraction destroys the antioxidants in the Olive Oil.

Our olives are carefully handpicked from certified organic, ancient heirloom trees that are between 300-1000 years old, ensuring that only the finest, most naturally cultivated fruit is selected. Once harvested, the olives undergo a meticulous process in which they are cold pressed between stone, a traditional technique that has been used for centuries to preserve the integrity of the oil. Rather than relying on the more commonly used centrifuge method, which rapidly extracts oil in larger quantities, we adhere to the ancient slow drip method, a time-honored process that yields less oil but significantly enhances its quality. This deliberate and patient extraction process helps retain the olive oil’s full nutritional value, preserving its essential antioxidants, vitamins, and rich, complex flavors while also preventing rancidity, which commonly manifests itself in olive oil with that strong "acidic" taste.

Ancient Farming Methods

In Addition to the Heirloom Trees what makes our olive oil unique is the ancient farming methods used on the farm for generations. Each tree was planted far apart to ensure the Soil doesn't get depleted and the trees are supplied with adequate nutrients. This is in contrast to modern farming methods whereby the olive trees are planted in rows using the row farming technique which depletes the soil of key nutrients and minerals.

Our trees survive for hundreds of years due to these ancient techniques.  As a result, our strong and healthy olive trees produce olives fortified with high levels of polyphenols and antioxidants which have anti-inflammatory properties.

Most of today's olive trees are GMO hybrid trees which bear fruit after 3 years whereas our Heirloom Olive trees only bear fruit after 20 years. For most producers, the economic incentive to harvest quickly overrides the health benefits of using heirloom trees. The new GMO trees do not contain high nutrient levels and do not have the life expectancy of our heirloom trees.

Olive Oil from Ancient Heirloom Trees. Our special Olives are harvested in Spain from 300-1000 year old trees. These trees have been cultivated for generations on a family farm using ancient farming methods. Most olive oil today is made from newer hybrid trees. These trees are authentic real non-hybridized trees, cultivated with ancient farming methods. Hundreds of years ago, the farmers planted each tree far apart from one other to ensure the soil doesn't get depleted and the trees are supplied with adequate nutrients.

In addition to the heirloom trees, what makes this olive oil unique is its extraction process. Our extraction is done using an ancient slow drip system, whereby the oil is separated from the water in the olives. 89% of Olive Oil today is extracted by machine using the centrifuge method. The centrifuge method heats the oil, destroying the molecular structure and removing its health benefits. Even "cold pressed" olive oil is centrifuge. Our ancient Slow Drip Method preserves the molecular structure remains intact, thus ensuring Optimum Health Benefits.
