At Joseph’s Ancient Foods, we believe everyone deserves food as pure as it was thousands of years ago. Our mission is to bring the ancient, life-giving foods of our ancestors back to your table.
We’ve purchased and protected farmland with original ancient trees and crops, where the soil remains free from pesticides and synthetic fertilizers. Grown and harvested the traditional way, our foods are as nature intended. Our olive trees, some up to a thousand years old, continue to thrive in the hills in the Spanish countryside — nourished by deep, mineral-rich soil and cared for using the same sustainable farming methods that have supported generations before us. These ancient trees produce olives with naturally higher levels of antioxidants, polyphenols, and essential nutrients, resulting in a truly living oil. We extract it slowly using a traditional Roman drip method — a 30-day, heat-free process that preserves its full spectrum of health-supporting compounds and authentic flavor.
Our dedication to these same principles continues with our Ancient Organic Wine, made from old-vine grapes that yield smaller harvests but richer, more nutrient-dense fruit. The result is a pure, low-sulfite wine, naturally fermented and full of beneficial polyphenols. Wines
Crafted from ancient vineyards cultivated and harvested for centuries, Joseph’s Ancient Heirloom Wine represents the highest expression of ancient viticulture. Our grapes originate from heritage vines that have adapted naturally over generations, developing exceptional nutrient density and extraordinary flavor complexity. These vines—mostly between 100 and 300+ years old—grow in mineral-rich soils untouched by synthetic chemicals, allowing the fruit to mature in perfect harmony with its environment.
In part because of its old age, and in part because of our vineyard's protection from exposure to pesticides, fertilizers and other dangerous chemicals, our grapes are strong enough to withstand and convert to a consistently good wine with natural fermentation and without the use of any ADDED SULFITES or Preservatives.
Most grapes, largely due to pesticides, fertilizers, hybridization and other modifications, lose their natural enzymes that help stabilize the wine during the fermentation process. This then requires wineries to add sulfites, which in turn ruins the health benefits of the fermentation and causes that common acidic "shoepolish" aftertaste and feel.

Ancient Fermentation
Our wines are fermented using traditional methods that rely on natural yeast and slow, temperature-controlled fermentati. Instead of using rapid industrial fermentation systems, we allow the wine to mature gradually in a way that protects its natural compounds. Modern accelerated fermentation can degrade beneficial polyphenols and diminish the wine’s nutritional value. Our approach preserves these compounds, resulting in a cleaner, naturally nutrient-rich wine.

Joseph's Ancient Premium Olive Oil is produced from Ancient Heirloom trees 300-1000 years old. Situated in the hills surrounding an old Spanish farming village, our olive orchards have been cultivated for generations on a Family Farm.
King David Olive Oil is defined by our strict use of (organic) ancient heirloom trees. However, one of our oil's other unique features is its extraction process. The extraction we use is an ancient Roman technique called "Slow Drip." This 30-Day method allows the oil to separate from the water and "residue" naturally, albeit slow, while keeping the molecular & nutritional structure intact. 99% of olive oil today utilizes the modern-day centrifuge to separate the oil. This destroys the oil's molecular structure, thereby destroying many of its health benefits. Therefore, sticking with the ancient slow-drip method ensures optimal taste & nutritional benefits. Cold Drip Method
The olives are pressed between ancient stones. Then the oil is extracted using the ancient slow drip method, instead of the commonly used centrifuge. Centrifuge extraction destroys the antioxidants in the Olive Oil.

Using the slow drip method takes a lot longer, but ensures the olive oil maintains its nutritional value and prevents rancidity, all of which are essential to consuming healthy, high-quality oil.

Foods
Our foods come from certified organic heirloom groves and orchards, many of which have been farmed for 300–1,000 years. We use these long-established growing environments to ensure consistent, naturally cultivated harvests. Each fruit and nut is harvested at peak ripeness to maintain its natural quality and nutrient content.
After harvesting, our foods go through careful, traditional preparation methods. Instead of using high-heat or rapid industrial processing—which degrade nutrients and alter flavor—we rely on slow, low-intervention and ancient techniques such as sun-drying, low-temperature dehydration, and stone-pressing. These methods produce smaller quantities but result in higher-quality foods.
This approach helps retain the full nutritional profile of our ancient foods, including antioxidants, vitamins, and minerals, while avoiding the tasteless, off-flavors, and substantial nutrient loss commonly found in mass-produced alternatives.
Our Ancient Waters
Joseph's Ancient Waters are sourced from medicinal European springs long used in traditional water-based healing (medical hydrology). We top-source these springs—without drilling—so the springs are never drained, and the water remains in its natural, untainted state.
These springs have been used for hundreds of years by nearby settlements for their naturally therapeutic properties. Their mineral composition was formed over long periods as water slowly filtered through untouched geological layers. Because the springs were never industrially tapped or mechanically altered, their natural structure remains the same as it was centuries ago. This long-standing preservation is what allows the water to maintain its original purity, mineral density, and health-supporting characteristics.
Our waters are naturally alkaline (not mechanically alkalized), preserving their original mineral structure. Heirloom Trees
Olive Oil from Ancient Heirloom Trees. Our special Olives are harvested in Spain from 300-1000 year old trees. These trees have been cultivated for generations on a family farm using ancient farming methods. Most olive oil today is made from newer hybrid trees. These trees are authentic real non-hybridized trees, cultivated with ancient farming methods. Hundreds of years ago, the farmers planted each tree far apart from one other to ensure the soil doesn't get depleted and the trees are supplied with adequate nutrients.

Drip Method
In addition to the heirloom trees, what makes our olive oil unique is its extraction process. Our extraction is done using an ancient slow drip system, whereby the oil is separated from the water in the olives. 89% of Olive Oil today is extracted by machine using the centrifuge method. The centrifuge method heats the oil, destroying the molecular structure and removing its health benefits. Even "cold pressed" olive oil is centrifuge. Our ancient Slow Drip Method preserves the molecular structure remains intact, thus ensuring Optimum Health Benefits.
